This paper shows how much food waste is generated by classic restaurants in Novi Sad, what is the composition of food waste, how much it contributes to environmental pollution through greenhouse gas emissions, and how this waste can be treated to reduce greenhouse gas emissions. The paper presents the results obtained using the SWEET program tabularly and graphically. The reason for the reduction of food waste is not only the direct loss of food, but also the effects on the environment and the economy, and thus on society as a whole. Food waste currently causes 8% of greenhouse gas emissions, which means that reducing the amount of this waste is necessary due to climate change.
