For the opening of a new production system for the production of wine, a technological procedure was developed, the selection of the region for the selection of the plot, the choice of wider and narrower locations was made. In order for the winery to be as successful as possible at the very beginning, the need for the application of lean philosophy was observed, lean concepts with a focus on value stream mapping (VSM) were presented, and the electronic kanban that will be used was presented. A value stream was designed that enabled a graphic representation of the production process, from the grape harvest itself to the delivery of finished products to customers. In the new winery, an information system was developed using a lean approach in order to improve operations and use the possibilities of new technologies.
